A comforting and hearty soup that combines the sweetness of butternut squash with savory sausage and cheese-filled tortellini.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1 pound butternut squash, peeled and diced
  • 4 cups chicken broth
  • 1 package (9 ounces) cheese tortellini
  • 1 pound Italian sausage, cooked and crumbled
  • 2 cups baby spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, and sauté until softened.
  3. Stir in thyme, sage, and butternut squash, cooking for a few minutes.
  4. Pour in chicken broth and bring to a simmer.
  5. Cook until butternut squash is tender.
  6. Add tortellini and sausage, cooking until tortellini is al dente.
  7. Stir in spinach until wilted, season with salt and pepper.
  8. Serve hot and enjoy!
