  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in baking soda and salt.
  5. Add sugar, egg, and vanilla extract; mix well.
  6. Stir in the flour until just combined.
  7. Pour half of the batter into the prepared pan, sprinkle with cinnamon, then add the remaining batter on top.
  8. Bake for 60-65 minutes, until a toothpick comes out clean.
  9. Let cool in the pan for a few minutes before transferring to a wire rack.
