  • 1 cup turkey bacon, chopped
  • 1 cup mushroom, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups rotisserie chicken, shredded
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 teaspoon black pepper
  • 2 cups spinach
  • 1 lemon, juiced

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the turkey bacon, cooking until crispy.
  3. Stir in mushrooms, onion, and garlic; cook until softened.
  4. Add shredded rotisserie chicken and chicken broth to the pot.
  5. Add thyme, black pepper, and let simmer for 20 minutes.
