  • 1 cup fresh cranberries
  • 1 cup sugar
  • 1/2 cup orange juice
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon orange zest
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, orange juice, oil, and orange zest.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Gently fold in the cranberries.
  6. Fill the muffin cups about two-thirds full.
  7. For the streusel topping, mix together 1/2 cup flour, 1/4 cup sugar, and 1/4 cup butter until crumbly. Sprinkle over the muffin batter.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
