A rich and comforting creamy soup made with rotisserie chicken and mushrooms.

Ingredients

  • 2 cups rotisserie chicken, shredded
  • 1 cup mushrooms, sliced
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add mushrooms and cook until soft.
  4. Stir in shredded rotisserie chicken, then add chicken broth and thyme.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Stir in heavy cream and season with salt and pepper.
  7. Simmer for an additional 5 minutes and serve hot.

Notes

  • This soup can be made ahead of time and stored in the fridge.
  • For a thicker consistency, reduce the amount of broth.
