  • 1 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegan chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the almond flour, all-purpose flour, cocoa powder, coconut sugar, baking soda, and salt.
  3. In another bowl, combine the melted coconut oil, maple syrup, peppermint extract, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until combined.
  5. Fold in the vegan chocolate chips.
  6. Drop spoonfuls of the dough onto a lined baking sheet.
  7. Bake for 10-12 minutes, or until edges are firm.
  8. Allow to cool before serving.

Notes

  • For a stronger peppermint flavor, increase the amount of peppermint extract.
