  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup heavy cream (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and chopped onion, sauté until soft.
  3. Stir in the broccoli florets and cook for a few minutes.
  4. Pour in the vegetable broth, salt, black pepper, and red pepper flakes.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Blend the soup until smooth, returning it to the pot.
