A delicious and nutritious breakfast sandwich featuring creamy avocado and perfectly cooked eggs.

Ingredients

  • 2 slices whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 slice of cheese (optional)

Instructions

  1. Start by toasting the bread slices until golden brown.
  2. While the bread is toasting, heat olive oil in a skillet over medium heat.
  3. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  4. Meanwhile, mash the avocado in a bowl and season with salt and black pepper.
  5. Spread the mashed avocado evenly on the toasted bread.
  6. Once the eggs are cooked, place them on top of the avocado.
  7. If using, add a slice of cheese on top of the eggs.
  8. Top with the second slice of bread, slice in half and serve immediately.
