- 1 pound boneless, skinless chicken breast
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can green chilies
- 3 cups chicken broth
- 2 cups white beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup corn, frozen or canned
- 1/2 cup plain Greek yogurt
- 1/4 cup cilantro, chopped
- In a large pot, heat olive oil over medium heat. Add chopped onion and garlic; sauté until onions are translucent.
- Add the chicken breast and cook until no longer pink. Remove the chicken, shred it, and set aside.
- In the same pot, add green chilies, chicken broth, white beans, cumin, chili powder, salt, and pepper. Bring to a boil.
- Add the shredded chicken and corn to the pot; reduce heat and simmer for 20 minutes.
- Stir in Greek yogurt and cilantro before serving.
Notes
- For extra flavor, consider adding diced jalapeños.
- Top with more cilantro or avocado for garnish.
