Ingredients

  • 1 cup dried lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté until the vegetables are tender.
  3. Add the garlic, thyme, and oregano. Cook for another minute until fragrant.
  4. Stir in the lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. Reduce heat and let simmer for about 30-35 minutes, or until the lentils are soft.
  6. Add the spinach and cook until wilted. Season with salt and pepper to taste.
