Delicious and easy Maple Brown Sugar Oatmeal Muffins that are perfect for breakfast or a snack.

  • 1 cup rolled oats
  • 1 cup milk
  • 1/2 cup brown sugar
  • 1/2 cup maple syrup
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, combine rolled oats and milk; let sit for 10 minutes.
  3. In another bowl, whisk together brown sugar, maple syrup, vegetable oil, and eggs.
  4. Add the oat mixture to the wet ingredients and mix well.
  5. In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
  6. Gradually fold the dry ingredients into the wet mixture until just combined.
  7. If desired, stir in nuts.
  8. Fill the muffin tin about 2/3 full with batter.
  9. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  10. Let muffins cool before serving.

Notes

  • For added flavor, you can sprinkle some oats on top before baking.
  • These muffins freeze well, so make a double batch!
