- 1 cup rolled oats
- 1 cup milk
- 1/2 cup brown sugar
- 1/2 cup maple syrup
- 1/2 cup vegetable oil
- 2 eggs
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 cup chopped nuts (optional)
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- In a bowl, combine rolled oats and milk; let sit for 10 minutes.
- In another bowl, whisk together brown sugar, maple syrup, vegetable oil, and eggs.
- Add the oat mixture to the wet ingredients and mix well.
- In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- If desired, stir in nuts.
- Fill the muffin tin about 2/3 full with batter.
- Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
- Let muffins cool before serving.
Notes
- For added flavor, you can sprinkle some oats on top before baking.
