- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup green beans, trimmed and cut
- 1 cup spinach, fresh
- 1/4 cup fresh parsley, chopped
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until soft.
- Add garlic and cook for an additional minute.
- Pour in the chicken broth and diced tomatoes.
- Add the shredded chicken, oregano, basil, salt, and pepper. Stir to combine.
- Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
- Add the green beans and spinach; cook for another 5 minutes.
- Stir in fresh parsley before serving.
