A hearty and flavorful Mediterranean Chicken Soup that combines traditional flavors with a modern twist.

  • 2 cups cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup green beans, trimmed and cut
  • 1 cup spinach, fresh
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until soft.
  2. Add garlic and cook for an additional minute.
  3. Pour in the chicken broth and diced tomatoes.
  4. Add the shredded chicken, oregano, basil, salt, and pepper. Stir to combine.
  5. Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
  6. Add the green beans and spinach; cook for another 5 minutes.
  7. Stir in fresh parsley before serving.

Notes

  • For a richer flavor, use homemade chicken broth.
  • Feel free to add any other vegetables you like.
