  • 1 cup grated carrots

  • 1/2 cup raisins
  • 2 cups whole wheat flour
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix together the mashed bananas, grated carrots, eggs, honey, and coconut oil until well combined.
  3. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined. Fold in the walnuts and raisins.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
