  • 1 cup heavy cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon gelatin
  • 2 tablespoons cold water

Instructions

  1. Purée raspberries in a blender until smooth, then strain to remove seeds.
  2. In a separate bowl, whip heavy cream with sugar and vanilla until stiff peaks form.
  3. In a small bowl, dissolve gelatin in cold water and let sit for 5 minutes.
  4. Heat the gelatin mixture gently until dissolved, then mix with the raspberry purée.
  5. Fold the raspberry mixture into the whipped cream gently until combined.
  6. Pour the mousse into heart-shaped molds and refrigerate for at least 4 hours.
  7. Unmold and serve chilled, garnished with extra raspberries.
