  • 2 ripe bananas, mashed
  • 1 cup sourdough starter
  • 1/2 cup coconut flakes
  • 3/4 cup chocolate chips
  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the mashed bananas with the sourdough starter until combined.
  3. Add in the sugar, vegetable oil, egg, and vanilla; mix until smooth.
  4. In another bowl, whisk together flour, baking soda, and coconut flakes.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
  8. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  9. Allow to cool before serving.

Notes

  • For extra coconut flavor, add more coconut flakes.
  • These muffins freeze well; just let them cool completely before storing.
