- 1 cup sourdough starter
- 1/2 cup coconut flakes
- 3/4 cup chocolate chips
- 1/2 cup sugar
- 1/2 cup flour
- 1/4 cup vegetable oil
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the mashed bananas with the sourdough starter until combined.
- Add in the sugar, vegetable oil, egg, and vanilla; mix until smooth.
- In another bowl, whisk together flour, baking soda, and coconut flakes.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Pour the batter into a greased muffin tin, filling each cup about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Allow to cool before serving.
