- 2 cups cooked chicken, diced
- 4 slices turkey bacon, cooked and crumbled
- 1 cup corn, canned or frozen
- 1 cup black beans, drained and rinsed
- 2 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- In a large bowl, combine the chicken, turkey bacon, corn, black beans, romaine lettuce, cherry tomatoes, avocado, and cheese.
- In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
