A delicious and fresh take on a classic salad featuring southwest flavors and turkey bacon.

Ingredients

  • 2 cups cooked chicken, diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1 cup corn, canned or frozen
  • 1 cup black beans, drained and rinsed
  • 2 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chicken, turkey bacon, corn, black beans, romaine lettuce, cherry tomatoes, avocado, and cheese.
  2. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Add cilantro on top and serve immediately.

Notes

  • For a spicier version, add jalapeños or a spicy dressing.
  • This salad can be made ahead, but add avocado last to prevent browning.
