- 400 grams spaghetti
- 6 cloves garlic, thinly sliced
- 120 ml extra virgin olive oil
- 1 teaspoon red pepper flakes
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Grated Parmesan for serving, optional
- Cook the spaghetti according to package instructions until al dente.
- In a large pan, heat the olive oil over medium heat and add the sliced garlic.
- Cook until the garlic is golden and fragrant, being careful not to burn it.
- Add the red pepper flakes and stir for a few seconds.
- Drain the spaghetti, reserving some pasta water, and add it to the pan with the garlic oil.
- Toss to combine, adding reserved pasta water if needed.
- Remove from heat and mix in the chopped parsley, and salt to taste.
- Serve with grated Parmesan if desired.
Notes
- For a milder garlic flavor, cook the garlic for a shorter time.
