A delicious and healthy take on the classic chicken parmesan, using cottage cheese for added creaminess and protein.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup cottage cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a skillet over medium heat and brown the chicken on both sides.
  4. In a baking dish, spread half of the marinara sauce at the bottom.
  5. Place the browned chicken on top of the sauce and spread the remaining marinara sauce over the chicken.
  6. Dollop the cottage cheese on top, followed by the mozzarella cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  8. Let it rest for a few minutes before serving.
