A delicious twist on the classic Chicken Cordon Bleu featuring turkey bacon for a lighter flavor.

Ingredients

  • 2 chicken breasts
  • 4 slices turkey bacon
  • 4 slices Swiss cheese
  • 1 cup flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Flatten the chicken breasts using a meat mallet.
  3. Layer turkey bacon and Swiss cheese on each chicken breast.
  4. Roll and secure with toothpicks.
  5. Dredge in flour, dip in beaten eggs, and coat with breadcrumbs.
  6. Heat olive oil and butter in a skillet, then brown the chicken rolls on all sides.
  7. Transfer to oven and bake for 25 minutes until cooked through.
  8. Remove toothpicks and serve.
